Butternut Squash and Spring Green Pie: A Healthy, Satisfying Meal

The Ingredients You Will Need
- Butternut Squash x1
- Red Onions that Have Been Cut Into Wedges x2
- Chili Flakes (1 Tsp.)
- Spinach (400g)
- Olive Oil (1 Tbsp.)
- Crumbled Feta Cheese (100g)
- Filo Pastry (4 Sheets)

How to Create This Dish
The oven should be preheated to 220 degrees C, or 200 degrees C if you have a fan oven. You will need to put the onions, chili flakes and squash in an ovenproof dish. Season them well and then cook in the oven for around 20 minutes. The squash should be tender at the end of this cooking time and the onions should also be starting to change colour.
While the squash is cooking, put the spinach into a colander. You should then pour over boiling water from the kettle. Make sure that any excess water is squeezed out of the spinach before you add it to the squash mix. Sprinkle the feta cheese over the mixture and then break up the filo pastry and also sprinkle that over the top too. Brush with a little oil before placing the dish in the oven for 15 minutes. The pastry should be crisp and golden when you take it out.
