Sausage with Green Pepper by Frank Sinatra

Set aside about an hour and 15 minutes to prepare this. For 4 servings, you will need three green peppers, 30 ml of olive oil, 1 pound of sausages, and 50 ml of red wine. Start by heating the oven to 350 degrees. Pluck off the stems and chop the green peppers into large chunks before you remove the seeds. Place the pepper pieces into a baking dish, pour the olive oil and then slide the dish into the oven. Allow the peppers to sauté until they soften.
Season the green pepper with powdered pepper and salt to preferred taste before removing the dish and placing the cooked pepper onto a plate. Place the sausages in the same dish and roll them a bit in the residual olive oil. Add red wine, cover the dish with foil then bake for 40 minutes. Next, remove the foil, add the peppers you had sauted earlier then bake for a further 30 minutes.
Serve with pasta, crusty garlic-tinged bread and, if you are up to it, more red wine!
